Blackberry Balsamic Chicken Dressing

Blackberries are in season for the month of August. A delicious tasty end of the summer dish!

Ingredients
  

  • Main Ingredients:
  • 1/2 lb of boneless chicken breasts with or without skin
  • 1 cup of fresh blackberries
  • 1/4 of red or white onion sliced
  • 1/4 cup of walnuts optional
  • Dressing:
  • 1/2 cup of blackberries grab fresh
  • 2 teaspoons of dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons of honey
  • 1 teaspoon of soy sauce
  • salt/pepper to taste

Method
 

  1. How To:
  2. -Season your chicken breast. I season with salt, pepper, garlic powder and a sprinkle of lemon juice from a fresh lemon.
  3. -In a skillet, I put a tablespoon or so of olive oil and heat over medium heat.
  4. -I then add my chicken breast to the skillet and cook over med/high heat until fully cooked through. Once cooked, turn off heat, leave chicken in pan and cover with pot lid or foil.
  5. -In a medium-size bowl: combine all of your dressing ingredients, except blackberries. On a plate take your blackberries and mash with a fork. Once your blackberries are mashed add to your dressing ingredients (that includes your mashed blackberry juices also). Whisk everything together. Seaon with salt/pepper to taste.
  6. -Remove your chicken from skillet and slice into strips.
  7. -Plate your chicken (can be on rice, lettuce, pasta).
  8. -Drizzle your blackberry dressing over chicken and garnish with extra blackberries.
